Corn and Green Onion Fritters

- 3/4 cup all purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt

- 1 egg or egg replacer
- 3/4 cup soy beverage
- 1 tbsp. vegetable oil
- 1/2 cup frozen corn, defrosted
- 2 green onions, chopped
- olive oil to cover bottom of pan to about 1/4 inch


Sift together the flour, baking powder and salt. Separately, combine the egg or egg replacer, 1/2 cup of the soy beverage and the vegetable oil. Combine the dry and wet ingredients.
Add the corn and green onions. Add the additional soy beverage carefully. The batter must be thick enough to form patties. Stir until all the ingredients are combined and make four patties, flattening to about 1/2 inch.

Heat the olive oil to medium. Cook the patties on one side until they start to brown around the edges and then flip to cook the other side, adding more olive oil if necessary.

Serve immediately as a side dish for dinner or with veggie sausages for breakfast. Serves 2.
