Chocolate "Cheese" Cake

This recipe doesn't use cheese at all, but a non-dairy substitute that is made mostly from soy called Tofutti "Better than Cream Cheese"from Tofutti Brands Inc.

- 2 containers of Tofutti (approx. 16 ounces)
- 1/2 teaspoon vanilla
- 1/2 cup sugar
- 1 egg
- 4 squares semi-sweet chocolate, melted and cooled
- 1 chocolate crumb crust (can be made with margarine)

Mix the Tofutti, sugar and vanilla with an electric mixer. Add the egg and then the melted chocolate and continue to mix until all the ingredients are well blended. Pour into the chocolate crust and bake at 350F for 40 minutes. Let it cool to room temperature and then refrigerate for 2-3 hours. It is delicious served with fresh raspberries or strawberries.
