Tofu Salad on Multigrain
Toast- 1/2 lb firm tofu - 1 small onion, finely diced -
1 stalk celery, finely diced - 2 tbsp green olives,
chopped - 1/4 cup mayonnaise or "Nayonaise" (vegan mayo) -
salt and pepper to taste - 8 slices multigrain bread,
toasted - 4 tbsp fresh parsley, chopped
Press the
tofu between paper towels to remove the moisture. Place in a bowl and mash with
a potato masher or fork. Add the other ingredients and mix well. (You may want
to adjust the ingredients or seasonings to your own taste.)
Toast the multigrain bread, remove the crusts and cut diagonally to make
triangles. Spread each triangle with the tofu salad and sprinkle the fresh
parsley on top. Makes 16 hors d'oeuvres.
