Avocado Wraps - 2
semi-ripe avocados - 1 tbsp (15 ml) lemon juice - 1 cup (240 ml) celery,
diced finely - 1 cup (240 ml) raisins - 1/2 cup (120 ml) chopped walnuts,
toasted (350F (180C) for 5 minutes) - 1/2 cup (120 ml) mayonnaise (or vegan
nayonaise) - 12 large soft tortillas
Peel, pit, and chop the avocados
into small pieces, Sprinkle with the lemon juice. Add the celery, raisins, and
toss with the mayonnaise. Just before assembling the wraps, add the toasted
walnuts and mix. To assemble the wraps, put a dollop of the mix in the middle
of the tortilla. Turn in the ends, wrap and secure with a toothpick. Makes 12
wraps. |
