Free Run Hens, Organic Dairy Products, Egg Replacers, Soy Products

Some of our menu plans include eggs and dairy products. You may want to eliminate one or both from your diet either for health reasons or for the welfare of the animals. Following is some information on "critter friendly" products and soy based replacements.

Eggs from Free Run Hens

Eggs from free run hens are tastier and the hens have a much better life (room to move, fluff their feathers, perch, make nests.) In Canada, one of the producers of free run eggs is Burnbrae Farms. From their main page, go to Product Information, then scroll down to the "Free Run" section.

Organic Dairy Products

Did you know that cows must keep giving birth in order to keep producing milk ? (Well, OK, not everyone knows this.) It could make you want to give up dairy altogether. There are farms, though, that take good care of their animals and produce organic products.

Egg Replacers

There are a number of different brands of egg replacers that can be used in cooking or baking. (You cannot make an omelette with them, though.)

Soy Products to Replace Dairy

The soy bean is quite amazing. It is, of course, a plant and has no cholesterol (cholesterol is found only in animal products including eggs and dairy.) There are soy based products that can be used to replace milk and cheese. For example, unflavoured soy drink can be used in baking to replace milk without sacrificing taste or texture. It can also be used in sauces. (It does tend to thicken more quickly that milk.) There are also soy based "cheese" products in familiar flavours, such as cheddar, that can be used in cooking and in sandwiches. Tofutti Brands Inc. has a replacement for cream cheese that has a slightly different texture, but tastes almost the same (and is quite delicious.) It can be used just like cream cheese, including "cheese" cakes with fewer calories, lower fat and no cholesterol. Another replacement for cream cheese is Yoso Spreadables that also comes in different flavours. Tofutti Brands Inc. also has an ice cream replacement that has a wonderfully rich taste (the texture is like soft ice cream.)

Margarine

Margarine has been around for a long time and the health benefits of using it rather than butter are well known. You can certainly replace butter with margarine in virtually any recipe without altering the taste. Some do not like the taste of margarine on toast, for example, as well as butter. You can substitute, though, with soy based cream "cheese" , peanut butter, or just jam or marmalade directly on toast without either butter or margarine.
