Dosas

Dosas are an East Indian type of crepe, very delicious, and sometimes used with a filling.

- 1/2 cup Urud Dal (a type of lentil)
- 1 1/2 cups rice flour
- salt

Soak the dal for about three hours and then grind into a paste in a blender. Add enough water to the flour to make a paste and mix with the ground batter. The consistency should be similar to pancake batter. More water can be added if it seems too thick. Add salt to taste and let the mixture stand overnight to ferment.
To make the dosas, heat a generous amount of vegetable or olive oil to medium high in a pan or on a griddle. Pour some of the batter and quickly spread it out, using a spatula, to make a very thin crepe. It will cook in ablout two minutes. You may have to flip it to finish the cooking.
