Veggie Burger Helper


- 3/4 cup pasta (short cut)
- 2 tbsp olive oil
- 1 medium onion, diced
- 1/2 pkg Yves Veggie Ground Round - Original
- 1 cup diced tomatoes (canned is fine)
- 3/4 tsp salt
- freshly ground pepper
- 2 tbsp fresh parsley

Cook the pasta according to package directions and drain.
Cook the diced onion in olive oil over medium heat until the onion has softened. Add the Yves Veggie Ground Round, tomatoes, salt and pepper and simmer for about five minutes. Mix with the pasta and top with fresh parsley. Serves 2.
