Mock Chicken
Wraps 1 pkg it's all good Veggie Chick'n Breasts (herb
Dijon marinade) - lettuce - mayonnaise or Nayonaise - 2
carrots, shredded - 2 slices red onion, chopped - 1 tomato, chopped -
salt and pepper - six large flour tortillas
Cook the veggie chick'n
breasts according to the package directions. When done, slice each piece into
six strips. To assemble the wrap, place a piece of lettuce in the centre of a
tortilla. Add a dollop of mayonnaise or Nayonaise, two chick'n strips, a
few carrot shreds, a few pieces of chopped onion, a few pieces of tomato, and
salt and pepper to taste.
Fold in the sides of the tortilla and then
roll from a third side, fastening the wrap with a toothpick. Heat a non-stick
pan to medium high and brown each wrap on both sides. Remove the toothpick and
slice the wrap on an angle. Serves 4, with a side dish such as fries or potato
salad. |
