Sweet and Sour
Tofu - 2 tbsp vegetable oil - 1/2 pkg firm tofu, drained and
cut into 1/2 inch cubes - 1/2 green pepper, chopped - 1 slice pineapple,
cut into 1 inch pieces
Sauce: - 2/3 cup rice vinegar - 2 tbsp
ketchup - 2 tsp soy sauce - 2 gherkin pickles, thinly sliced - 1/2 cup
brown sugar - 1 tbsp maple syrup - 1 tbsp corn starch mixed with 2 tbsp
warm water
Sauté the tofu and green pepper until the tofu
is nicely browned and the green pepper is softened. Mix all the sauce
ingredients except the corn starch and water, and bring to a simmer over medium
heat. Add the corn starch and water and continue cooking until the sauce has
thickened. Add the tofu, green pepper and pineapple. Serve with
rice. Serves 2.
