Cole Slaw - 2
cups shredded cabbage - 3/4 tsp salt - 1 carrot, grated - 2 green
onions, chopped - 1 tsp fresh parsley, chopped
Dressing: - 1 tbsp
cider vinegar - 1/2 tbsp maple syrup - 2 tbsp mayonnaise (or
Nayonaise or Vegenaise) - 2 tbsp sour cream (or Tofutti
Sour Supreme)
Sprinkle the salt on the shredded cabbage and
let it stand while preparing the other ingredients. Combine the dressing
ingredients and mix well. Toss the cabbage with the carrot, green onions,
parsley, and the dressing. Chill for 1/2 hour before serving.
Serves 2.
