Quick Caesar Salad
- 1 shallot, finely chopped - 1 tbsp Dijon mustard - 2 tbsp lemon
juice - 6 tbsp olive oil - 2 tbsp capers, drained and chopped - 1 head
romaine lettuce - 1/4 cup chopped fresh parsley - 1/4 cup vegan parm or
grated parmesan cheese - 1/2 cup store bought croutons
Whisk together
the first five ingredients to make the dressing. Tear the lettuce into bite
sized pieces and mix well with the dressing to coat the lettuce. Add the
parsley and parm and mix again. Top with the croutons. Serves 2. |
