Tofu Cacciatore

Tofu can be used to replace chicken in many traditional dishes. It, of course, does not need to be cooked as chicken does, but just added close to the end of the cooking time. Following is an example of replacing chicken with tofu.


- 2 tbsp olive oil
- 1 package firm tofu, cut into cubes
(press tofu between paper towels to remove the moisture)
- 1 shallot
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 can (7/12 ounces) tomato sauce
- 2 cups canned or fresh tomatoes
- 1/4 cup red wine vinegar
- 1 teaspoon salt
- freshly ground pepper
- 1/4 tsp dried thyme
- 1 bay leaf

Cook the shallot, onion, and green pepper in olive oil until the onion has softened. Stir in the remaining ingredients (except the tofu), cover and simmer for 30 - 45 minutes.

Meanwhile, brown the tofu cubes on all sides in olive oil over a medium heat. Add the tofu to the sauce for the last 10 minutes of cooking. Remove the bay leaf. Serve with rice. Makes 4 servings.
