Guacamole - 2
ripe avocados (if they are hard, ripen by placing in a paper bag with a banana
at room temperature for a couple of days - you may have to sacrifice the
banana) - 1/4 cup (60 ml) chopped red onion - 1 shallot, chopped - 1
jalapeno pepper, seeded and chopped - 2 tbsp (30 ml) fresh lime juice - 4
tbsp (60 ml) fresh cilantro, chopped - salt and pepper to taste
Peel
the avocados, cut in half and remove the pit. Mash the avocados in a bowl and
add the other ingredients, mixing well. Chill until ready to serve. (Any
leftover actually freezes quite well.) Guacamole is a nice with nachos,
quesadillas or as a dip with tortilla chips. |
