Tomato and Red Onion
Salad - 2 tomatoes - 1/2 red onion - 2 tbsp (30 ml) fresh
herbs, such as parsley, cilantro, chives, basil - 2 tsp (10 ml) vegetable
oil - 1 tsp (5 ml) red wine vinegar - salt and pepper
Arrange on
individual salad plates, sliced tomatoes and a few slices of red onion. Chop
the fresh herbs and sprinkle on top. Add salt and pepper to taste. Make a
vinagrette of the red wine vinegar and vegetable oil and drizle over the top of
each salad. Serves 2. |
