Soy of Asparagus
Soup- 1 lb (.45 kg) asparagus cut in pieces - 3/4 cup (180
ml) salted water - 1 cup (240 ml) soy "milk" - 2 tbsp (30 ml)
margarine
Cook the asparagus in the salted water until
tender (8-10 minutes.) Blend the asparagus and 1/2 cup (120 ml) of the cooking
water in a food processor, then add the soy "milk". Return to the stove to warm
and add the margarine. Add some croutons, if desired. Serves 4. |
