Spicy Baked Tofu, "Stuffing", "Gravy"


Spicy Baked Tofu
You can buy a package of seasoning (such as Kraft Shake'n'Bake) or make your own with your favourites such as fine bread crumbs mixed with Cajun spice or chili powder, salt and pepper. Using one package of firm tofu (about 1/2 lb), press the extra liquid out between paper towels. Cut the tofu in 1 inch cubes and dredge in your seasoning mix. Bake at 350F for 20 minutes. (Note, the stuffing, below, takes a 1/2 hour at the same temperature, so be sure to start it first.) Baked tofu takes on a firm texture that is quite enjoyable.

"Gravy"
This is a recipe for a basic vegetarian brown sauce. It is fairly bland but goes well for the above dishes as they are spicy. If you use it with other dishes, you may want to add soy or teriyaki sauce or another sauce to add flavour.
- 2 tbsp margarine
- 2 tbsp flour
- 1 cup good quality vegetable stock
- 1/4 tsp salt and pepper to taste
Melt the margarine over a medium heat, add the flour and stir well. Add the vegetable stock and continue cooking and stirring until the sauce thickens. Add the salt and pepper. Serve over the spicy tofu and "stuffing."
