Kale with Sesame/Ginger
Sauce - 4 cups (960 ml) kale leaves, roughly chopped - 1/2
cup (120 ml) vegetable broth - 1 shallot, finely chopped - 3/4 tsp (4 ml)
hot pepper flakes - 3/4 tsp (4 ml) grated ginger - 1 1/2 tsp (8 ml)
toasted sesame oil - 4 tbsp (60 ml) vegetable oil - 1 tbsp (15 ml) red
wine vinegar
Over low heat in a covered pan, steam the kale in the
vegetable broth until it has wilted (about 3 minutes.) Combine the remaining
ingredients and mix well. Drain any excess liquid from the kale, add the sauce
and mix well. Serve immediately as a side dish.
Serves 2.
