Hash Browns - 2
medium potatoes, cut into sticks about 1/4 inch thick - 1 medium onion,
chopped - 3 tbsp olive oil - salt, pepper, thyme flakes to taste
Cook the potatoes sticks in boiling water for about 5 minutes. They should be
mostly cooked through.
In the olive oil, over medium heat, add the
onion, potatoes and seasonings. Mix a few times until the onion starts to
soften, then pat down to brown. When one side is browned, turn the mixture over
to do the other side. Mix again before serving. Serves 2 as a side
dish.
