Greek Salad
Pasta - linguine for 2 (approx. 5 oz or 140 grams) - 2 tbsp
(30 ml) olive oil - 1 medium onion, chopped - 1 roasted red pepper,
chopped - 1/4 cup (60 ml) sliced black olives - 2 medium tomatoes,
roughly chopped - salt and pepper to taste - 3 oz. (85 grams) feta
cheese (real or vegan), crumbled - 2 tbsp (30 ml) olive oil - 1 tbsp (15
ml) lemon juice - 1 tsp (5 ml) feta, mashed - pinch of dry
oregano
Cook the pasta according to package
directions
Sauté the onion in 2 tbsp (30 ml) of olive oil until
well softened. Combine the roasted red pepper, olives, and tomatoes and warm
slightly in the microwave so that they do not cool the pasta. Also combine the
additional olive oil, lemon juice, mashed feta and oregano.
When the
pasta is done, add the feta and mix well. Then add the roasted red pepper,
olive, tomato combination and the olive oil, lemon juice, mashed feta, oregano
combination. Mix well and add salt and pepper to taste.
Serve with
Pita and a Cucumber and Onion Salad.
