Sweet and Sour Stir
Fry - 2 tbsp (30 ml) vegetable oil - 1 red pepper,
chopped - 1 green pepper, chopped - 1/2 pckg Yves Beef Veggie
Tenders (or a simlar product) - 1/2 cup (120 ml) edamame - 3 green
onions, sliced - 2 tbsp (30 ml) prepared mustard - 4 tbsp (60 ml)
ketchup - 2 tbsp (30 ml) soy sauce - 1/2 cup (120 ml) brown
sugar
Over medium-high heat, stir fry the red and green peppers in
vegetable oil for about 5 minutes, then lower the heat and add the veggie
tenders, edamame and green onions. Continue to stir fry for about another 5
minutes.
Combine the mustard, ketchup, soy sauce and brown sugar, stir
well and warm in the microwave. Add to the vegetables and veggie tenders,
mixing well.
Serve with Basmati rice. Serves 2. |
