Horiatiki Salad


- 2 tbsp (30 ml) olive oil
- 1 tbsp (15 ml) red wine vinegar
- 1 red pepper, seeded and chopped
- 1 green pepper, seeded and chopped
- 1 thick slice red onion, chopped
- 1/2 English cucumber, peeled and sliced
- 2 tomatoes, roughly chopped
- 1/4 cup (60 ml) feta cheese, cubed
- 1/3 cup (80 ml) Kalmata olives, pitted and sliced
- salt and pepper to taste

Combine the olive oil and red wine vinegar to make a vinaigrette. Mix together the remaining ingredients and drizzle with the vinaigrette. Serves 3-4.
