Quick Risotto - 1
pkg Lundberg Risotto Creamy Parmesan - 1 small onion, sliced - 1
cup (240 ml) sliced cremini mushrooms - 3 tbsp (45 ml) olive
oil
Start the risotto, following package directions and 1 tbsp (15 ml)
of the olive oil. Meanwhile, sauté the onion and mushrooms in a separate
pan, using the remaining olive oil. Mix with the risotto and serve immediately.
Serves 2.
