substitutions in your own favourite recipes
Following are some ideas for replacing
meat, poultry and fish in your existing recipes.
- Yves Veggie Ground Round Original can be
used to replace ground round in recipes such as spaghetti sauce, lasagna, chili
or stuffed peppers. Yves also has a Mexican flavoured veggie ground
round that is tasty in tacos. Lghtlife has a similar product. We have
not tried it, but like other Lightlife faux meats, so it is probably a
safe bet to try. These veggie ground round products do not need to be cooked
nearly as long as real meat. You usually can add them for just the last few
minutes of cooking. Lightlife also makes a product called GimmeLean
Sausage Style. It comes in a tube like package and holds together, so that
you can make burgers from it. It is also good in stuffed peppers.
- Veggie Meatballs. Yves and Veggie
Patch both make a mock "meat" ball that can be used in spaghetti
sauce.
- Tofu to replace chicken. There are a couple
of things you can do with tofu to improve its texture. First, press it between
paper towels to remove the excess moisture. Next, you can cut it into bite size
pieces and brown it in olive oil over a medium heat. Or, you can cut it into
one inch cubes and bake in the oven at 350F for about 20 minutes. Then, use the
tofu to replace chicken in your favourite recipes. Another idea for tofu cubes
is to Shake'n'Bake them. Bake at 350F for 20 minutes. They go well with
plum sauce.
- Tempeh to replace veal or fish. Veal and
fish have quite delicate flavours and it is often the sauce that makes the
dish. Tempeh has a firmer texture than tofu and a slighlty nutty flavour. It
usually comes in squares that are about 1/2" thick. Cut the squares
horizontally to make them 1/4" thick. Then cut the squares diagonally to make
trangles, for presentation purposes. Coat the pieces in a liquid such as soy
milk, egg replacers or real egg. Dredge them in FRESH breadcrumbs (can be made
easily in a blender.) Then brown the pieces in olive oil over a medium heat.
Use with your favourite sauces.
- Yves Veggie Skewers on the barbeque. (These
skewer products may not be available in the U.S.) They can be put directly on
the barbeque according to package directions. On separate skewers, place some
veggies such as cherry tomatoes, green pepper and onion slices. The veggies
will take about the same amount of time to cook as the skewers. When done,
remove and serve with rice or baked potatoes.
- Veggie Dogs, Burgers and Sausages. There are
several brands of these, so you can try them to find the ones you like
best.
- Yves Veggie Salami Slices. These make a
delicious lunch in a sandwich with mustard and lettuce.
- Yves Veggie Breakfast Links. These are like
sausages - delicious with pancakes and maple syrup.
