Sweet and Sour Tofu - 2 tbsp (30 ml)vegetable
oil - 1/2 pkg firm tofu, drained and cut into 1/2 inch (1.25 cm) cubes -
1/2 green pepper, chopped - 1 slice pineapple, cut into 1 inch (2.5 cm)
pieces
Sauce: - 2/3 cup (160 ml) rice vinegar - 2 tbsp (30 ml)
ketchup - 2 tsp (10 ml) soy sauce - 2 gherkin pickles, thinly sliced -
1/2 cup (120 ml) brown sugar - 1 tbsp (15 ml) maple syrup - 1 tbsp (15
ml) corn starch mixed with 2 tbsp (30 ml) warm water
Sauté
the tofu and green pepper until the tofu is nicely browned and the green pepper
is softened. Mix all the sauce ingredients except the corn starch and water,
and bring to a simmer over medium heat. Add the corn starch and water and
continue cooking until the sauce has thickened. Add the tofu, green pepper and
pineapple. Serve with rice. Serves
