Corn
and Green Onion Fritters - 3/4 cup (180 ml) all purpose
flour - 1 1/2
tsp (8 ml) baking powder - 1/2 tsp (3 ml)salt - 1 egg or egg
replacer - 3/4
cup (180 ml) soy beverage - 1 tbsp (15 ml) vegetable oil - 1/2 cup (120 ml) frozen corn,
defrosted - 2
green onions, chopped - olive oil to cover bottom of
pan
Sift
together the flour, baking powder and salt. Separately, combine the egg or egg
replacer, 1/2 cup (120 ml) of the soy beverage and the vegetable oil. Combine
the dry and wet ingredients.
Add the corn and green onions. Add the additional soy
beverage carefully. The batter should have the consistency of pancake batter -
i.e. should " puddle" when put into the pan.
Heat the olive oil to medium-high.
Spoon the mixture to make four fritters, cook on one side until they start to
brown around the edges and then flip to cook the other side, adding more olive
oil if necessary.
Serve immediately as a side dish for dinner or with
veggie sausages for breakfast. Although this is a savoury dish, it does go well
with a little maple syrup. Serves 2.
