Hash Browns - 2 medium potatoes, cut into sticks about 1/4 inch
(.6 cm) thick - 1 medium onion, chopped - 3 tbsp (45 ml) olive oil -
1/4 tsp (2 ml) each of salt, pepper, dry thyme
Cook the potatoes
sticks in boiling water for about 5 minutes. They should be mostly cooked
through.
In the olive oil, over medium heat, add the onion, potatoes and
seasonings. Mix a few times until the onion starts to soften, then pat down to
brown. When one side is browned, turn the mixture over to do the other side.
Mix again before serving. Serves 2.
