Mock Chicken Scallopini - 2 gardein chick'n scallopini" breasts" (1 pkg contains
four) - 2 tbsp (30 ml) vegetable oil - 1/3 cup (80 ml) vegetable
stock - 12 capers, drained and chopped - 2 tbsp (30 ml) lemon juice -
1 tbsp (15 ml) margarine
Sauté the "breasts" from frozen in the
vegetable oil for about 3 minutes per side. In a separate pan, place the
vegetable stock and capers and simmer until reduced by half. Add the lemon
juice and margarine and warm through. Serve the scallopini with the sauce and
pasta such as tagliatelle (drizzle some of the sauce on the pasta.) Serves
2.
