Spicy Basmati Rice

- 1/2 cup (120 ml) basmati rice
- 1 tbsp (15 ml) olive oil
- 1 torn fresh basil leaf or a few flakes of dry basil
- 1/4 tsp (2 ml) salt
- 1/4 tsp (2 ml) lemon juice
- 1/2 tsp (3 ml) coriander
- 1/2 tsp (3 ml) cumin
- 1/4 tsp (2 ml) turmeric
- 1/2 cup (120 ml) vegetable stock
- 1/2 cup (120 ml) water
- 2 green onions, chopped

In a sauce pan, coat the rice with the olive oil and add the basil, salt, lemon juice, coriander, cumin and turmeric. (If you do not have all these spices, some can be omitted - such as the coriander and turmeric.) Add the vegetable stock and water, bring to a boil, cover, lower heat and simmer for the time suggested on the rice instructions. Remove from heat and let stand for 5 minutes. Serve with green onions on top. Serves 2.
