Falafel in
a Pita Pocket - 1/2 pkg falafel mix - 4 tbsp (60 ml) olive
oil - 1/2 head
lettuce - 1
tomato - 5
radishes, sliced - 1 green pepper, chopped - 3 green onions,
chopped - 1/2
cup (120 ml) salad dressing - 4 pita pockets
You can make falafel from scratch, but
there are a number of brands of mixes available. Generally, you need only to
mix with water, let stand for a few minutes and shape into balls. You then fry
them in olive oil until crisp. Stuff the pita pockets with salad fixings and
add the falafel, for a delicious healthy meal. Serves
