Salad -
1/2 head Iceberg lettuce, chopped - 1/4 cup (60 ml) sliced black
olives - 3 slices red onion, chopped - 1/2 English cucumber, peeled and
sliced - 1 tomato, chopped - 1/4 cup (60 ml) feta cheese (optional) -
1 tbsp (15 ml) Balsamic vinegar - 2 tbsp (30 ml) olive oil
Mix
together the lettuce, olives, onion, cucumber, tomato and feta. Make a
vinagrette of the Balsamic vinegar and olive oil and drizzle over the salad.
Serves 2.
