Pasta Primavera

- 1/2 head broccoli, cut in florets
- 1/2 head cauliflower, cut in florets
- 1 red pepper, chopped
(Note: the above vegetables could be replaced by zucchini, carrots, mushrooms, asparagus or something else you have available)
- 1 tbsp (15 ml) chopped parsley
- 2 green onions, chopped
- 2 tomatoes, roughly chopped
- 2 tbsp (30 ml) olive oil
- 2 cups (480 ml) penne
- salt and pepper to taste

Cook the penne according to package directions. Meanwhile, steam the broccoli, cauliflower, red pepper (or your other veggies) until just tender. When done, toss the penne and the cooked vegetables with the parsley, green onions, tomatoes, olive oil and salt and pepper. Serve with Italian bread.
Serves 2.
