Potato
Salad Salad: - 3 cups (720 ml) potatoes, cooked and
cubed - 1 stalk celery, chopped - 3 green onions, chopped - 2
radishes, sliced - 2 tbsp (30 ml) sweet pickles,
chopped
Dressing: - 1/2 cup (120 ml) mayonnaise or Nayonaise - 1 tbsp (15 ml) sweet pickle
juice - 1 tsp (5 ml) mustard - 2/3 tsp (4 ml) salt - freshly ground
pepper
Combine the first five ingredients in a salad bowl. Whisk
together the dressing ingredients and toss with the salad. Chill for two hours
before serving. Serves 4.
