Quesadillas - 2 tbsp (30 ml) olive oil - 1 red pepper,
chopped - 1 green pepper, chopped - 1 small onion, chopped - 3/4 cup
(180 ml) grated cheese (real or vegan) - 1 tomato, roughly chopped - 4 12
inch (30 cm) flour tortillas
Cook in olive oil, until softened,
the onion and green and red pepper. Arrange the cooked vegetables on two flour
tortillas and sprinkle with the grated cheese. Cover each with a second flour
tortilla. Bake at 350F (180C) for about 10 minutes. Slice in quarters, add the
chopped tomato on top and serve with salsa and Guacamole. Serves 2.
