Sweet
Potatoes with Kale - 2 medium sweet potatoes, peeled and cut into 1
inch (2.5 cm) cubes - 2 cups (480 ml) finely chopped kale (stems
removed) - 1/2 cup (120 ml) vegetable broth - 1/4 tsp (2 ml) salt - 1
tsp (5 ml) sesame seeds Boil the sweet potato cubes in salted water for
about ten minutes, or until soft. Steam the kale in vegetable broth in a
covered pan for about three minutes. Drain.
Mash the sweet potatoes
with the salt and sesame seeds and then mix in the kale. Serves
2.
