Sweet and
Sour Stir Fry - 2 tbsp (30 ml) vegetable oil - 1 red pepper,
chopped - 1 green pepper, chopped - 1/2 pckg Yves Beef Veggie Tenders (or a simlar product) -
1/2 cup (120 ml) edamame - 3 green onions, sliced - 2 tbsp (30 ml)
prepared mustard - 4 tbsp (60 ml) ketchup - 2 tbsp (30 ml) soy sauce -
1/2 cup (120 ml) brown sugar
Over medium-high heat, stir fry the red
and green peppers in vegetable oil for about 5 minutes, then lower the heat and
add the veggie tenders, edamame and green onions. Continue to stir fry for
about another 5 minutes.
Combine the mustard, ketchup, soy sauce and
brown sugar, stir well and warm in the microwave. Add to the vegetables and
veggie tenders, mixing well.
Serve with Basmati rice. Serves
