Swiss Seitan

Seitan is a wheat gluten product, sometimes call wheat cutlets. It has a firm, chewy texture and is a good replacement for beef.

- 1 pkg seitan ( approx. 1/2 lb or .23 kg)
- 4 tbsp (60 ml) vegetable oil
- 1 green pepper, chopped
- 1 medium onion, chopped
- 1 stalk of celery, very finely chopped
- 1 10 oz (300 ml) can condensed tomato soup
- 1/2 can water

Pat the seitan dry between paper towels and tear into bite size pieces. Set aside. In 2 tbsp (30 ml) of the vegetable oil, cook the green pepper, onion and celery over low-medium heat for about 15 minutes. Add the tomato soup and water and simmer for about another 5 minutes. During this last step, sauté the seitan pieces in the remaining oil in a separate pan for 5 minutes. Stir the seitan into the tomato mixture and serve immediately with baked potatoes. Serves 4.
