Veggie Burgers au Poivre

- 2 veggie burgers
- 1 1/2 tsp (8 ml) freshly ground black pepper
- 2 tbsp (30 ml) margarine

Sauce:
- 2 tbsp (30 ml) margarine
- 2 tbsp (30 ml) flour
- 1/4 tsp (2 ml) salt
- 1 cup (240 ml) vegetable broth
- 1 tsp (5 ml) soy sauce
- 1/2 tbsp (8 ml) green peppercorns, drained (usually found canned in a brine)

Dredge the veggie burgers in the ground black pepper. Over medium heat, sauté the burgers in the margarine for about 4 minutes on each side. Keep warm. To make the sauce, melt the margarine and stir in the flour and salt. Add the vegetable broth and cook, stirring, until the sauce has thickened. Add the soy sauce and green peppercorns. Put the sauce over the burgers. and serve with French fries. Serves 2.
