Burgers "Victoria" - 2 veggie burgers - salt and pepper to taste -
4 tbsp (60 ml) margarine - 1 shallot, chopped - 6 cremini mushrooms,
sliced - 1/2 cup (120 ml) ketchup - 1/2 cup (120 ml) white wine - 1
tbsp (15 ml) chopped parsley Sprinkle the salt and pepper over the
veggie burgers. Cook in 2 tbsp (30 ml) of the margarine over medium heat for
about 4 minutes per side. Keep warm. To make the sauce, sauté the
shallot in the remaining margarine for about 1 minute. Turn the heat to medium
high, add the mushrooms and ketchup and cook for 2 minutes. Add the wine and
parsley, turn the heat back to medium and simmer for 5 minutes. Serve the sauce
over the veggie burgers with a tossed salad. Serves 2.
