Jerk
Marinade -
1 medium onion, chopped - 1 shallot, chopped - 2 limes - 2 tbsp (60 ml) ginger,
grated - 2 tbsp
(30 ml) soy sauce - 3 tbsp (45 ml) maple syrup - 2 tbsp (30 ml) olive
oil - 1 tbsp
(15 ml) dry thyme - 2 tsp (10 ml) allspice - 1/2 tsp (3 ml)
cayenne - 1 tsp
(5 ml) nutmeg -
2 jalapeno peppers, seeded and chopped - 1 pkg extra firm tofu, cubed OR 1 pkg
Yves Chicken Veggie Tenders
Place the
first 12 ingredients, including the zest and juice of the 2 limes, into a
blender and puree.
Marinate firm tofu cubes or mock chicken for at least
an hour.
Sauté the tofu or mock chicken in olive oil
over medium heat until nicely browned. Serves 4.
