Black Beans
and Rice -
1 cup (240 ml) rice - 1 tsp (5 ml) salt - 1 tsp (5 ml) allspice
- 2 cups (480
ml) vegetable broth -
1 tsp (5 ml) lime juice - 1 cup (240 ml) black beans, drained and rinsed
- 4 tbsp (60
ml) fresh cilantro, chopped
Combine all of the ingredients except the cilantro to
cook the rice. To serve, mix the rice well and top with the cilantro. Serves 4.
