Chocolate
Mousse - 6
squares (6 oz. or 170 grams) Donini Dark Chocolate Bar
- for baking and fondue - 1 pkg (12 oz. or 340 grams) soft
silken tofu -
1/2 cup (120 ml) cream sherry - 1/2 cup (120 ml) sugar
Note
the Donini Dark Chocolate Bar is vegan, but
is sweetened. If you use another type of dark chocolate, you may need to add
more sugar.
Melt the chocolate in the microwave or in a double
boiler and cool slightly. Blend with the soft silken tofu in a food processor
until smooth and creamy. Add the sherry and sugar slowly, continuing to
pulse.
Pour
into serving dishes and refrigerate at least two hours. (It will keep at least
three days when refrigerated.)
Serves 6.
