Pasta with
Tomato, Onion and Basil - 1 1/2 cups (360 ml) rotini
pasta - 2 tbsp
(30 ml) olive oil - 1 large onion, chopped - 4 Roma tomatoes, coarsley
chopped - 1/2
cup (120 ml) cream cheese or Tofutti Better than Cream
Cheese -
salt and pepper to taste - few leaves fresh basil
Cook the pasta according to package
directions. Sauté the onion in the olive oil until
softened.
Add the chopped tomatoes, "cheese", salt and pepper
and warm through. Mix with the cooked pasta. Place on serving plates and top
with fresh basil.
Serves 4.
