Baked Tofu Skewers with Mango and Cucumber


- 1 pkg (.75 lb or 350 grams) extra firm tofu
- 3/4 cup (180 ml) Hoisin sauce
- 1 English cucumber
- 2 mangos
- fancy toothpicks

Pat dry the tofu and cut into squares, 1 by 1 by 1/2 inch (2.5 by 2.5 by 1.3 cm.) Place in a shallow bowl and cover with the Hoisin sauce, allowing to marinate for a half hour.

Place the tofu squares on a baking sheet and bake at 350F (180C) for six to 8 minutes. Allow to cool

Peel and slice the cucumber and mangos, cutting the mango into sizes about the same as the cucumber.

Assemble one slice of each of the cucumber, baked tofu and mango on each toothpick. Chill until serving.

Makes about 24.
