Vegan Quiche


- 1/2 Pastry recipe
- 1 pkg (12.3 oz or 349 grams) firm silken tofu
- 2 tbsp (30 ml) corn starch
- 1/2 cup (120 ml) soy beverage
- 1/2 tsp (3 ml) pepper
- 1 tsp (5 ml) salt
- 1/2 tsp (3 ml) turmeric
- 1 tsp (5 ml) soy sauce
- 4 green onions, chopped
- 1 roasted red pepper, finely chopped
- 1/4 cup (60 ml) sun dried tomatoes, finely chopped
- 3 slices Earth Island Provolone Style Slices, chopped
- 2 tbsp (30 ml) artichoke pieces

Prepare the pastry and place in a 9 inch (23 cm) pie plate.

Mix the next seven ingredients in a food processor until smooth. Transfer to another bowl and add the green onions, red pepper, sun dried tomatoes, provolone, and artichokes.

Pour into the pie shell and bake at 400F (200C) for 30 minutes.

Serves 6.
