package "Yves" Veggie Ground Round
(12 oz.) (.34 kg) - 1 medium baking potato - 2 small onions, finely
chopped - 2
tbsp (30 ml) parsley, chopped - 1 egg or egg replacer - 1 tsp (5 ml)
salt - 1/2 tsp
( 3 ml) pepper -
1/3 cup ( 80 ml) ketchup - 1 tsp (5 ml) vegetarian Worcestershire
sauce
Peel
and cut the baking potato into 1 inch (2.5 cm) pieces. Cook in boiling water
for about 15 minutes (until tender enough to mash.) Drain and mash (no
additives.)
Mix the mashed potato well with the veggie ground
round, chopped onions and parsley.
Combine the other ingredients and mix well with the
veggie ground round mixture. Press into a loaf pan and bake 40 minutes at 350F
(180C.)
Serves 4.
