Salad - 4
tomatoes, sliced - 1 green pepper, thinly sliced - 4 thin slices red
onion - salt and
pepper - 4 tbsp (60 ml) fresh herbs such as parsley, basil,
chives - 4 tsp
(20 ml) vegetable oil - 2 tsp (10 ml) red wine
vinegar
On
four salad plates, arrange vertically the green pepper, then the onions, then
the tomatoes to form a green/white/red/ pattern similar to the Italian flag.
Sprinkle
with salt and pepper and the fresh herbs.
Mix well the vegetable oil and red
wine vinegar and drizzle over the salads.
Serves 4.
