- 1 green pepper, thinly sliced
- 4 thin slices red
- salt and
- 4 tbsp (60 ml) fresh herbs such as parsley, basil,
- 4 tsp
(20 ml) vegetable oil
- 2 tsp (10 ml) red wine
four salad plates, arrange vertically the green pepper, then the onions, then
the tomatoes to form a green/white/red/ pattern similar to the Italian flag.
with salt and pepper and the fresh herbs.
Mix well the vegetable oil and red
wine vinegar and drizzle over the salads.
