Mock Swiss
Steak - 1
pkg Yves Beef Veggie Tenders or 1 pkg
gardein beefless tips - 4 tbsp (60 ml)
vegetable oil - 1 green pepper, chopped - 1 medium onion, chopped -
1 stalk of celery, very finely chopped - 1 10 oz (300 ml) can condensed
tomato soup - 1/2 can water Cut the beef veggie tenders or beefles
tips into bite sized pieces and set aside.
In 2 tbsp (30 ml) of the vegetable
oil, cook the green pepper, onion and celery over low-medium heat for about 15
minutes. Add the tomato soup and water and simmer for about another 5 minutes.
During this last step, sauté the veggie tenders
or beefless tips in the remaining oil according to package directions. Stir
into the into the tomato mixture and serve immediately with baked
potatoes.
Serves 4.
