Mock Chicken Salad on Sourdough - 1 pkg Yves Chicken Veggie
Tenders - 2 tbsp (30 ml) vegetable
oil - 8 slices sourdough bread, lightly
toasted - 8 tbsp (120 ml) margarine - 2 stalks celery, finely chopped - 4
green onions, chopped - 4 tbsp (60 ml) mayonnaise or
Nayonaise (vegan mayo) -
2 tbsp (30 ml) chopped sweet pickles - 1 carrot
shredded - salt and pepper to
taste
Sauté the veggie chicken tenders
for a few minutes in the vegetable oil and let cool. Mix with the last six
ingredients and assemble the sandwiches on the sourdough. Serves
