Tofu Salad Sandwiches
- 1/2 lb (225 gm) firm tofu - 1 small onion, finely diced - 1 stalk
celery, finely diced - 2 tbsp (30 ml) green olives,
chopped - 1/4 cup (60 ml) Nayonaise or Vegenaise (vegan mayo's) -
salt and pepper to taste - 8 slices multigrain bread,
toasted
Press the tofu between paper towels to
remove the moisture. Place in a bowl and mash with a potato masher or fork. Add
the other ingredients and mix well. (You may want to adjust the ingredients or
seasonings to your own taste.) Assemble the sandwiches using the multigrain
toast. Serves 4.
