Quinoa with
Avocado and Lime
- 1/2 cup (120 ml) quinoa - 1/4 tsp (2 ml)
salt - 1 firm
avocado, peeled, pitted and cubed -
2 tbsp (30 ml) olive oil - 1 tbsp (15 ml) lime juice - 1 shallot,
chopped - 2
tbsp (30 ml) red onion, chopped - 1 tsp (5 ml)dry cilantro
leaves - salt
and pepper to taste
Bring a cup (240 ml) of water to a boil, add the
quinoa and salt, cover and lower heat. Cook for 12-14 minutes and allow to cool
to room temperature.
Combine the other ingredients and mix well. When the
quinoa has cooled, mix with the avocado and lime vinaigrette and serve at room
temperature. Serves 2.
